This isn’t a dream, but a reality for diners at Ion – The Original Gastronomic Experience, Malta’s only two-Michelin-starred restaurant, which has taken its culinary journey to the high seas.

From Land to Sea: A New Culinary Voyage

Chef Patron Jonathan Brincat and his team have traded their bustling kitchen in the heart of Valletta for a state-of-the-art galley aboard a luxurious yacht. The ‘Ion at Sea’ experience is not just a meal; it’s a gastronomic adventure that sets sail from the historic Grand Harbour, cruising past the Three Cities and Fort St. Angelo, before anchoring in the tranquil waters of Marsamxett Harbour.

Fine Dining Meets Sea Breeze

Passengers are greeted with a champagne reception on the quayside at Sciberras Battery, before boarding the yacht. The journey begins with an aperitif on the deck, taking in the panoramic views of the Maltese coastline. As the sun sets, the first of the 14-course tasting menu is served, each dish a symphony of flavours inspired by Malta’s rich history and Mediterranean heritage.

Brincat, a native of Malta, explains, “We wanted to offer our guests a unique perspective on our cuisine, quite literally. Dining at sea allows us to showcase the best of Maltese gastronomy in a truly unique setting.”

Sustainability on the Menu

In keeping with Ion’s commitment to sustainability, the ‘Ion at Sea’ experience is not just a culinary indulgence, but also an eco-conscious one. The yacht is equipped with solar panels and a desalination system, ensuring minimal environmental impact. The menu, too, reflects this ethos, with a focus on locally sourced, seasonal ingredients.

Brincat adds, “We’re not just serving a meal; we’re telling a story about Malta’s culture, history, and terroir. And we’re doing it in a way that respects and protects our environment for future generations.”
